Simple No-Bake Oatmeal Bars

Simple No-Bake Oatmeal Bars

These delicious and simple no-bake oatmeal bars are super easy and convenient with only 5 ingredients! Did I mention that they're also gluten-free? Your kids will love these!

Ingredients

For The Bars:
  • 3/4 cup unsweetened natural peanut butter
  • 1/3 cup raw honey
  • 1 1/2 cups gluten-free rolled oats
For The Chocolate Top Layer:
  • 1 1/2 cups semi-sweet chocolate chips
  • 1 1/2 Tbsp Coconut Oil
  • Sea Salt (optional)

Instructions

For The Bars:
  1. Prepare your dish by adding parchment paper.
  2. Use either a mixer, handheld mixer or small bowl with spoon to mix together your peanut butter, honey and oats.
  3. Add this mixture to your dish lined with parchment paper.
  4. Use a plastic cup or glass (not thin glass) to press down the oatmeal peanut butter and honey blend until it is spread out.
For The Chocolate Top Layer:
  1. Add your chocolate chips and coconut oil to a microwave-safe bowl.
  2. Place bowl in microwave and heat up at 30 minute increments until thoroughly melted.
  3. Pour over oatmeal mixture in prepared dish.
  4. Use a knife or spatula to smooth chocolate over the bar layer.
Finishing Touches:
  1. Place dish in the freezer for 20-30 minutes until frozen.
  2. Once hard, remove from freezer and cut into your choice of shape (rectangle or square) and serve!
  3. Store in airtight container in refrigerator.

Notes

You can recreate this by adding your choice of toppings like pecans, salt, white chocolate chips, etc. These bars will taste amazing with anything, in my opinion!


Ingredient Substitutions:

  • Rolled Oats. You can sub out rolled oats for quick oats but you may need to add more peanut butter to prevent them from falling apart.
  • Peanut Butter. You can sub out for sweetened peanut butter if you don't have natural, just lessen your raw honey so that the bars aren't too sweet.
  • Raw Honey. You can sub out for any honey you have on hand, it doesn't have to be raw.
  • Semi-Sweet Chocolate Chips. You can sub out for any chocolate that you would like. Again, if you're using a sweeter chocolate just take that into account with the sweetness of your overall bar at the end.


Storage:

  • You can store these bars in an airtight container in the fridge for 5 - 7 days or in a freezer-safe ziploc or container for up to 2 months. Make sure it is freezer-safe so that your bars don't get freezer burn. Thaw out before eating.
