Easy + Fast Cottage Pie

Growing up I remember my mom making Cottage Pie all the time. I loved it! It’s such a simple and easy meal to make, and I’m going to share with you just HOW EASY it is!

I recommend precooking ground beef + chicken breasts on a Sunday to have ready for the week ahead. It makes things go so smoothly because let’s admit, the week days get busy oh so fast!

Ingredients:

1 pound of ground beef

6-8 potatoes (skins peeled off)

1 cup of carrots

1 cup of peas

Old cheddar cheese (or cheese of choice)

Salt

Pepper

Italian seasoning and garlic powder (added to the ground beef)

Directions:

  1. Peel and cut up potatoes. Add to a steam pot. Cook until soft. Then add to mixer while still hot. Add in your butter, salt, pepper and some milk until you get a smooth consistency. Add salt and pepper to your preference.

  2. Layer ground beef, carrots, peas and mashed potatoes in oven-safe dish.

  3. Top with cheese.

  4. Place in oven at 350F for 30 minutes or until warm.

  5. Serve and enjoy!
