Ingredients
- 2 Cups Einkorn Flour
- 1/2 Tsp Salt
- 1/3 Cup Melted Butter
- 1/2 Cup Cold Water
Instructions
- Combine flour and salt in a bowl.
- Melt butter, add to bowl along with cold water.
- Mix together with wooden spoon until well combined.
- Let sit for 15 minutes.
- Using a cast-iron pan, set heat to low (cast irons hold their heat well)
- Portion off golf-ball sized dough pieces. Flour surface and roll out. You can also use a tortilla press if you have one.
- Place rolled out or flattened dough in pre-heated cast iron pan. Allow it to cook for several minutes. When you see bubbles start to rise up, then flip over to other side for 1-2 minutes.
- You can keep your oven on its lowest heat setting to keep tortillas warm while you cook them all. They can be eaten freshly made or stored in fridge or freezer.
Notes
- I love making these in batches to store in fridge or freezer. They heat up really well!
- You can eat them with ANY meal, even as a sweet addition with hazelnut spread etc
- When freezing, place small pieces of parchment paper between each layer so they don't stick together. Store in a freezer safe bag to prevent freezer burn.
