You will love this simple summer pasta salad recipe! Sub in or sub out any ingredients you want or don't want. It's really easy to customize this recipe! I hope you enjoy!

Ingredients

  • 1 Medium Cucumber
  • 1 Red Pepper
  • 1 Small Sweet Onion or Half a Large Onion
  • 8 oz Cubbed Cheese (Marble or Cheddar)
  • 1 8oz Can of Corn
  • 1 1/2 Cup Mayonnaise
  • 1/2 Cup Sour Cream
  • 4 Tbsp Pickle Juice
  • 1/2 Tbsp White Sugar
  • 2 Tbsp Apple Cider Vinegar
  • 2 1/2 tsp Dijon Mustard
  • 1/4 tsp Salt
  • 1/4 tsp Pepper
  • 1/8 tsp Garlic Powder
  • 1/8 tsp Paprika
  • 2 boxes of Pasta (700g)

Instructions

  1. Boil a large pot of water and cook pasta until al dente. Do not over cook pasta.
  2. Once pasta has cooked, strain and allow to cool.
  3. Chop cucumber, red pepper, sweet onion and cheese into small cubbed pieces.
  4. Add to large bowl. Add can of corn as well as any other additions you would like in your summer pasta salad.
  5. Add the sauce ingredients of mayonnaise, sour cream, pickle juice, sugar, apple cider vinegar, dijon mustard, salt, pepper, garlic powder and paprika.
  6. Add the filling ingredients along with the sauce to the cooled down pasta.
  7. Mix and enjoy!

Notes

You may add any ingredients you would like to your summer pasta salad. You may choose your pasta, don't overcook or it will go mushy. Eat fresh or keep refrigerated for 5 days. Store in air-tight container in fridge. You may need to add more mayo and sour cream after being stored in fridge as they pasta absorbs some of the sauce.
