Fall Pumpkin Pecan Granola

This delicious Fall inspired Pumpkin Pecan Granola is so delicious and healthy! Pair with plain yogurt and top with a little maple syrup as a delicious high-protein treat!

Ingredients

  • 3/4 cup melted coconut oil
  • 3/4 cup honey or maple syrup
  • 1.5 Tbsp Vanilla Extract
  • 1/3 Cup Water
  • 1.5 Tsp Salt
  • 8 cups of rolled oats (or quick oats)
  • 1/4 cup wheat bran
  • 1 cup shredded coconut (unsweetened)
  • 1/4 Cup Brown Sugar
  • 1/4 Cup Pumpkin Seeds
  • 1/4 Cup Sunflower Seeds
  • 1/4 Cup Pecans (chopped)
  • 1/4 Cup Almonds (chopped)

Instructions

  1. Mix the melted coconut oil, honey, vanilla, water and salt in a separate bowl.
  2. Mix the oats, wheat bran, coconut, brown sugar, pumpkin seeds, sunflower seeds, chopped pecans and chopped almonds in a bowl.
  3. Pour the coconut oil mixture over the dry oat mixture. Mix well.
  4. Bake for a total of 1.5 hours, stir every 15-30 minutes. Bake until golden brown or to your preference.

Notes

Low and slow is the key to this granola. 1.5 hours at 250 degrees, mix the granola around every 15-30 minutes for an even bake all around. Enjoy!!
